A new way to fly high!

If you have traveled at all in the past few years and have been frustrated by the long lines at check-in and the overly secure security or have been given the bottom of the barrel when it comes to seat selection, or have arrived at check-in only to be told that you are 2 ounces over your weight limit…. then, you are going to be pissed to learn that there is a whole other way to travel – it’s called Elite Status baby!!!!

Those of you that already fly first class or are Elite members… you should have said something!!

Let’s start from the beginning.

It began a few of weeks ago… we were flying from Toronto to Vancouver and just before check-in I received an email notifying me that I had just achieved “Elite” status with Air Canada. I had no idea then, that that email would change me forever!

As I walked up to the check-in desk… I notified the person at the counter that I had received an “elite” notification… he was in the process of printing my boarding card…. he checked the system and sure enough, confirmed my elite-ness… he took my existing boarding card and tore it to pieces and then he proceeded to print out a NEW boarding card with the elite title on it….he then gave me passes to the “lounge” and explained a few of the elite benefits that I would be able to take advantage of immediately.

Security… those of us that travel a lot have at one time or another been standing at the back of one of these long lines staring impatiently at the guy holding up the line that had no idea that the 2 pounds of loss change in one pocket, a cell phone in another, and belt buckle the size of a serving platter would set off the metal detector!! I kid you not!!!!

Well, no more… we were guided to a separate security section, which i had NEVER even noticed… it’s written in code… I would share it here, but then you would all be in line with me and I would, well… be back to square one!

Once through security, which was brief and yes, pleasant…. in fact, the only thing lacking was Champagne… we entered a special set of doors where the Champagne dilemma was remedied. Waiting for your flight in the lounge translates into the equivalent of walking into your own fully stoked cafe lounge bar, complete with plush comfortable chairs, CLEAN bathrooms, and in London – SHOWERS!!!

Heading to the gate to catch the flight… which is timed perfectly to minimize the discomfort of standing… we quickly bypass the long lines of passengers waiting to board rows 35-60 and hand our boarding cards over to the gate agent dedicated to serving “our kind”. There’s nobody between us and the agent…. however, once on the ramp… we are quickly reminded how annoying it can be to wait!

At baggage claim… our bags our first out of the shoot… why? Because they are tagged PRIORITY – nice:))

I knew this would have a profound effect on my perception of my own “eliteness”, I just didn’t know that it would happen after just two flights!

After landing in London… rested from a comfortable flight (which was possible only because at check-in the agent was unwilling to seat us alongside the toilets and quickly moved us forward to the front of the plane, just behind business class) we headed out to catch a taxi…. after spotting the taxi stand, still in Elite mode, I walked right to the front… oblivious to the other 50-75 people standing line and proceeded to get in the first taxi that pulled up… shockingly, not one person said a single word! It was not until I was JUST about to get in, that Ozlem and I both realized…. OH! That’s a line!!! Don’t worry.. we gracefully walked to the back of the line:)))

Just this past weekend… at an airport that didn’t recognize Eliteness…. it was daunting to spot the long security line from the check-in counter…. we were quick to ask if there was a way around it!!!! Yes, it happens that quick! You can imagine that the agent looked at us with a blank stare… like… “what do you mean, a faster way?” It was funny, because his response was appropriate and simple…. “go and eat something and when you come back, there will hopefully be less people…” How’s that for an ELITE answer?!

I am learning to take this Elite thing in small doses… kind of like my coffee addiction….. I am making sure that I mix my first class upgrades with the occasional flight in coach (domestic only… nothing more than 2 hours – no need to be extreme about it!).

Update: this post was written before the new TSA rules were put in place. We do have a lot to say about that, but that’s a different post.

Montreal by Palate

As it says in the title of this entry, our experience of Montreal has mainly been focused around eating!

Before coming to Montreal, our good friend and chef, Francois, gave a us a list of “must eats” and our entire time here has reloved around our looking for and walking to one great eatery after another….. and tonight was the BEST!

We waited for three days to eat at Restaurant au Pied de Cochon… it started the day of our arrival:

Day 1: We called for a table only to find that it was the one day of the week that they were closed…

Day 2: We walk all day with 536 ave Duluth as our final destination only to find that it is fully booked, next opening… tomorrow night at 7:30 pm… and only at the bar

Day 3: We arrive with high expectations but still hoping for a table instead of two seats at the bar…. as it turns out, the bar faces right onto the open kitchen – an absolutely AMAZING experience for anyone who appreciates watching skilled professional chefs moving at a high rate of speed for hours – unreal!

We sat looking at the menu for awhile…even with an English menu, I had no idea what my options were…. after asking for suggestions… I still had no idea what he said! In the end, I went with the second thing…..that’s always a safe choice, especially when the waiter nods in total agreement with your well informed decision!

When my food arrived… as you can probably guess… I  had no idea what it was in front of me… and my first bite… absolutely AMAZING! It had all my favorite tastes!!!! What was in it – I have no idea!!! Would I have it again? ABSOLUTELY!!!

Ozlem finally had poutine from the homeland…. it was FANTASTIC!

It’s been a great few days… tomorrow… Toronto!

Montréal

Wow, it’s been a long time again, huh? Since we’ve written last, we did Immersion III and two workshops in Istanbul, went to Bodrum and Fethiye for a week-long vacation, taught workshops and teachers practices in Lausanne and Geneva, and just flew in to Montréal yesterday for a couple of days off before heading to Toronto for a couple of days and then Vancouver for TT1. Phew, I got tired writing about it. 🙂

I don’t have my computer with me (as some of you know I only travel withe the iPad now; which I need to start asking for a commission from Apple one of these days), but I’ll figure out another way to get some photos up. Stay tuned…

The Best Bread I’ve Ever Made

The “Perfect” Sandwich Bun

I believe I made the “perfect” sandwich bun two days ago. Isn’t this beautiful:

I’ve been looking for a good recipe for a bun and finally found a recipe here (I know, hers are shaped nicer :))

I had to make a small change as I couldn’t find “bread flour” here (we’re in Istanbul right now). I bought the highest protein flour that I could find, and used only that instead of mixing it with all purpose flour. We were all really happy with the outcome. Light and tasty…

I must be crazy considering the temperature right now, but I will be baking another bread today. If it comes out nice, I will share the photos with you.

Challenge 1 – Cooking Equipment

I thought I should start a theme here regarding the challenges of the kind of life we have. Since we are making breakfast right now, here is the first one: cooking equipment.

As some of you already know, we rent furnished apartments in Vancouver & Paris (we always get the same ones). And since they are both rentals, shall we say, they don’t necessarily have the best cooking environment. Also to be fair, we are pretty picky with the kind of things we cook with. Pans have to be stainless steel or cast iron, knives (oh the knives) have to be good and sharp, containers have to be non-plastic, etc., etc. For the most part, these two apartments have what we need, but there are small challenges.

In this post I want to talk about the knife situation a little bit. If you’ve done any kind of cooking, you know the value of a good knife. For me, a bad knife can really turn a nice afternoon of cooking into a nightmare. When we lived in LA, we had found a Japanese hardware store in downtown (of course in Little Tokyo) that had some amazing knives, and we quickly got addicted to Japanese knives. Especially the ones that are stainless steel but have a carbon tip-they are VERY sharp and they stay sharp for a long time. Pretty soon I couldn’t do any chopping with any other kind of knife, but a 210mm Gyuto (this one doesn’t have a carbon tip and we have the non-hammered version).

One thing with the carbon tip, as you might know, is that you have to use, then wash and dry right away, otherwise they will get rusty at the tip. Which is a little pain, but definitely worth it.

About a month ago, we finally decided to buy a good knife to carry around with us after I read a blog entry. He was talking about taking good knives with him when he travels, and I thought “why not?” After looking around for a while, we picked this one:

Paris Train

As we ride the train from Paris’ city center out to the airport, it only takes a handful of stops before the epic architecture that Paris is known for is traded in for newer industrial complexes that are typical in the outskirts of most cities. As the heart rides high from a week’s worth of cafes, wine, and coffee, you can almost feel the warmth start to dissipate… that is of course, until a gentleman steps onto the train for the next two stops to remind all, why Paris is Paris until the very end – click on the link below to listen and enjoy!

Q: So how do you guys like traveling like this?
A: We like it so far. It has its challenges like trying to pack for different seasons, finding good hairdressers, doctors, etc. in different cities, packing so frequently, but we chose this, and we are happy so far.

Q: Where is your “base” base?
A: We don’t have a “base” base right now, but Istanbul is the closest thing to it. I basically have my extra shoes there. 🙂

People are horny

Yes, I thought that would get your attention.

After spending many years in Istanbul, it occurred to me the other day that I have, in addition to learning a fair bit of Turkish, learned to speak “horn,” and here’s where this blog entry has potential to digress in a totally different direction!

What I mean when I say that people are horny, is that if you have ever lived in a city of 15 million people (give or take 5 million), you will agree that people use horns to communicate in all sorts of ways…based on my experience and observations while in an overcrowded city, I have put together a brief “Horn to English” dictionary… Enjoy!

Each category of vehicle has it’s own language so I shall separate them by class of transport. I will describe the action being emitted from the vehicle and follow it with what it is trying to communicate.

Taxis looking for customers:
Half a honk – hey! I’m a taxi!
One short honk – I see you walking and I could drive you where you want to go
Two short honks – really, I see you and I’m available
Two short followed by a double flash of the headlights – seriously, I know there are a thousand other taxis out here and you are still walking, so I can only assume that you haven’t found the right one… I’m your guy!
Three short but rapid honks – I’m fast, jump in and I will get you there in record time!

Taxis with customers:
Half a honk – watch out, I’m on a run, I can’t stop once I’ve started
One full honk – I’m a taxi and you’re a human crossing the road, you’re like a pigeon to me, either you get out of the way or I will run your a*s over… I’m not stopping!
One full honk at an intersection – I’m moving faster than you and if you can see the lack of concern in my eyes you will know…. I’m not going to stop, yield, or slow down!
One long honk – I was here first!
Two long honks, holding on the second – are you fuc**n’ kidding me!? Who parallel parks on a busy street at 6pm on a weeknight?!!!
One long honk AND HOLD – I don’t know what you 150 cars in front of me are stopped for… But if you can hear this, you will obviously take note of my urgent request and MOVE IT!!!!!
Two long honks AND HOLD – obviously you didn’t hear the first one…. Here’s another!!!!!!!
